This is my go to steak I do a reverse sear. Season like you cook a smaller steak The key is to cook at a low temp. around 240 indirect heat until internal temp 125- 130 for a medium finish Then crank up the heat I mean crank up the heat sear on both sides cook to desired finish. Feeds 2-3
