The outside of the griddle especially closer to the front where the grease trap is, will be a little cooler than the areas over the burners. However, if you're experiencing large temperature differences, here are some tips to help troubleshoot and prevent warping:- Preheat at lower temperatures and for a shorter period. This will give you greater control of your griddle temperature. You can also avoid wild temperature differences, by never adding a large amount of frozen food or cold water to a hot griddle. - Don’t overheat. You might get the urge to turn your burners up to "HIGH" when you use the Griddle, but don’t! Most only need to be set to “MED” to heat to over 500 degrees F.- Checking the levelling of your griddle can help ensure that the griddle top is receiving even heat distribution from the burners.
