taste and texture of the cheese is great to use instead of the powder Parmesan. I use it for soups, salads and baked dishes . it's a great complement to Mozarella topping. Adding an Umami satisfaction to proteins pastas and vegetables.its bag allows to dispense without touching the cheese as well as, good sealing from extra air--these factors allow for the cheese to last longer and avoid fungal growth.

This cheese is beyond delicious, I love it .. when I was first intoduced to it by my husband (who is Spanish) I was “ put off” by the super strong smell, he said “ just taste it” I know you will love it … so I did, & instantly fell in love with it … it actually is quite healthy compared to many other cheeses … only 1% cholesterol per serving & only 2% saturated fat !! .. I was immediately convinced & we both eat it with Salads, steamed veggies & tons more other foods … you have got to try it, you certainly will not be disappointed…

This cheese is SO wonderful that I consider it a staple in my house. I have had more than one guest ask me where I got it. I put it on most Italian dishes, and it is delightful in tomato soup, as well as salads. Also good on homemade pizza. You won't be disappointed.

I purchased this cheese because it was cheaper than the $15 a pound. I noticed while using that there is a lot of rind in the cheese. That doesn't really melt when using in hot food. And very unpleasant to chew if using in cold food. I thought maybe I just got a bad bag . So I purchased again. And that bag also had a lot of rind . It's impossible to cut it away once shaved . Cheese rind should be trimmed off before shaving. And definitely before putting in bag. No one wants to eat waxy rind. Unpleasant tasting and not good for you.But guess it adds weight. And weight means profit to company .
