This cheese is really good. Much easier than shredding the cheese yourself. It tends to get caked together in the corners of the bag and sometimes develops mold if it sits in my refrigerator for a few weeks. I think I would put a bag in my freezer if I had to do it over again. Otherwise, this is pretty good quality mozzarella cheese.

Its all I ever use on pizza. Comes in 2 1lb packs which is convenient. I usually make 3 pizzas at a time, and 1lb covers that pretty easily. Yeah yeah, you will hear that you shouldn't use pre-grated cheese, but I've had no complaints and don't spend the time grating.

too salty & something in here caused a mild allergic reaction - a better option would have less salt, organic, non-gmo, & made from milk not treated with rbGH (sometimes called rbST), "a synthetic recombinant bovine growth hormone given to cows to help them make more milk. Some parents are concerned that this added growth hormone can cause health problems in kids." "Cows who are given rbGH have a small added risk of developing mastitis, which is usually treated with antibiotics. This concerns some scientists, since antibiotic use in animals contributes to the rise of antibiotic-resistant bacteria. When these resistant strains start to spread, antibiotics commonly used to treat humans become less effective. To help curb this, the FDA has placed limits on dairy farmers' antibiotic use in cows, and milk is now regularly screened during processing. Still, research has shown that up to 60% of non-organic conventional milk, which is more likely to contain rbGH, contains antibiotic residues—though mostly in trace amounts."
