The cooking instructions are somewhat unhelpful because if you did what they asked you'd end up with very well done croissants. If you want flakey croissants that don't teeter or being burnt, do the following: 1. preheat to 375 2. stack two sheet pans and put the croissants with ample space on top of the second 3. bake for 13 minutes 4. turn temp down to 300 5. cook for another 10 minutes or until done this will ensure you get an evenly baked and puffed out croissant without overdoing it
