Excellent for steaks

This is a great cut of meat. Full disclosure - the butchering at the source (before it goes in the cryovac) now removes the cap. Coulotte steaks (picanha) have become a big thing in steakhouses, so the supplier removes those and likely sells that piece to them. A bummer, but not actually Sam's fault. Regardless, this is a beautifully lean cut of beef that butchers into steaks with very little waste. The prime grade is even better - and the grade I usually buy - but that's out of stock right now. Choice is still excellent and tasty - the only steaks we eat at home.
