3 Mixer RAVIOLI DAY SUCCESS

We recently made approximately 1,500 ravioli in about 10 hours using 3 Kitchenaid mixers. We had one seasoned pro and two able newbies. Here's some tips she passed to us and I'll pass to you: 1) small batch, well rested, firm dough is your friend 2) those claw things on the bottom need to be removed! 3) complete a cycle (run the pasta sheet, then make the ravioli) 4) freeze the finished sheet and snap it apart 5) be sure the fillings are well ground. We found spinach "threads" to be an issue, but no problem with ground meat, ground chicken, or any cheese. Long day = full freezers!

Worked like a charm

I had put this on my wedding registry and when I read the mixed reviews I almost returned it. So I figured I would give it a shot and it worked like a charm. The thing I saw that people were complaining about was leaking ravioli. To all the people that were complaining that it is a manual crank, who cares. It has to be a manual crank or you would have filling all over the place. By having it a manual crank you can make sure that you dont have anything leaking out anywhere. my first run though ( a dry run w/o filling) I noticed that the dough didnt quite match up. So then with my second sheet of dough I i stretched it out slightly and check for sizing and it fit great and I didnt have any leaking ravioli

Just make them by hand and save your money

I bought this attachment thinking I would be able to crank out huge quantities of ravioli with little effort, but what I found was that hand making them was similarly time consuming and more forgiving than using this attachment. I even took a ravioli making class that included a module that utilized the rollers to make sure I was making the dough correctly. In the course, I asked the instructor about using the ravioli maker and he told me the best way to use the ravioli attachment was to put it in the box on the highest shelf in the basement and use it as a dust collector. so thats where it will stay. Handmade raviolis are the way to go.

Very disappointed. Wanted this to work...

I am an experienced cook and love my KitchenAid mixer. I have worked in restaurants and made lots of raviolis in my life. All I can say is that I tried... I made 3 different consistencies of dough and although they came out ok, I couldn't get the ends to properly seal. I did just purchase the pasta arm and I am hoping that maybe that will help... Any suggestions?

I expected more.

I was so excited to finally own this attachment! This, being my number one attachment on my wish list, i was ecstatic when i actually did get it! I couldn't wait to bust it open and try that baby out! I got all the ingredients (Semolina was harder to find around here so it took a day or two) and made the dough. The dough came out fantastic and rolled perfectly with the pasta roller attachment. When it came time for the ravioli, i made sure to read all the instructions.. twice, to be sure i got it correct. Did as it said with the practice runs to "perfect the technique". I stuffed my raviolis with cheese, wanted to start out easy being the first time. The roller did not seal, not a SINGLE one. I was disappointed and tried a new technique. The second set did the same exact thing the filling was also bursting out of the unsealed pockets. I decided to re-read the instruction manual thinking that it was user error. Made a third set and turned out the same exact way. I mad sure that the pasta sheets were correctly placed on the rollers and made sure that it cover all the ends thinking that that was why my filling was leaking out and that they weren't sealing, that was not the problem. I was very disappointed. As i laid the unsealed, leaking, gooey pasta on the flour dusted wax paper to dry, it just turned into a large mush pile. I expected so much from this attachment and felt let down. I talked to a few friends and coworkers that have this same attachment and they all had the same problem, none of the raviolis sealed and ended up throwing them away. Sad that i wasted the time and ingredients for such a disaster. Hoping that kitchenaid finds the problem and fixes or comes up with a new/better attachment. I love all my kitchenaid products and I've never had any problems with any. I definitely wouldn't recommend this attachment. disappointed, to say the least.

Takes practice

I have used the ravioli maker twice. In short, it works well once you perfect the dough and your technique. You will NOT get perfect ravioli on your first try, so schedule a couple of "just for fun" sessions before trying to impress anyone. One thing I learned is the dough needs to be fairly thick or it won't seal between ravioli - 4 on the KA pasta press worked well. If you are going for that paper-thin style, better to make by hand. By the end of my second session I was competent making the cheese ravioli pictured here. With a little patience you will be able to do it too.

No go!

I was really excited to get this as a gift and try it as I love all the other attachements that I have. But sadly this fell short. So badly that it really needs to be reinvented. I couldn't find the right technique even with following the instructions! I ended up doing it by hand

Made homemade raviolios and they turned out perfect.

I got a ravioli make for a Christmas and i made about 100 raviolis and they turned out great. of course, i made a meat filling. It sealed them nicely. I haven't tried a cheese filling. i am looking for a good recipe for them. but I am totally satisfied with my product. Thank you Kitchenaid. Also my husband bought me the ohter three attachments for my mixer. to roll the dough out I also made spaghetti. they turned out great too.

Very finicky

While I am a total fan of the KitchenAid attachments and have raved about the ice cream maker, meat grinder, sausage stuffer, pasta roller and various pasta cutters the ravioli maker was a disappointment. The raviolis are very small and the operation very finicky...overall I think it was easier to simply use the roller to make two sheets of pasta dough and hand finish them. Really not that great as tends to make messy side raviolis and they are too small for my taste much neater to fill them by hand and less waste.

Not working as intended

The ravioli don't come out neat. I have tried differnt ways of feeding the filling but it will always get some filling in between raviolis once you cook them the ravioli burst. As an owner of multiple Kitchenaid I was expecting much more from this attachement. Not worth the investment.
