Thanks for reaching out! What you're noticing is what we call chocolate bloom. Chocolate contains cocoa butter, sugar, or oils in its formulation and if one of these separates from the other ingredients when subjected to heat and cools, the surface of the chocolate can appear cloudy gray or white or have spots on it.
