Secret Ingredient To Grandma's Fudge

This is the time to start purchasing all the ingredients for fudge making. It wouldn't be the holidays without it. My mother started the tradition in the 50's. She passed the torch to me in the 70's. I passed it to my daughter inthe 90's. Our recipes have used the preceding generations recipes with a few ingredient changes. But one ingredient has NEVER changed-it is our "secret" ingredient. NESTLIE Toll House Semi-Sweet Chocolate Morsels is the only chocolate used in our fudge recipes. I'm writing my ingredient list. Guess what's at top of the list?

Chocolate Lovers Pie

This is a great recipe using Nestle Toll House Morsels: Chocolate Caranel Truffle Torte: Crust: 1 and 3/4 cup very finely chopped pecans 2/3 cup sugar 1/4 cup melted unsalted butter Stir together, then press into bottom and up sides of 10" pan with removable bottom. Place onto baking sheet. Bake at 350 F for 15 to 18 minutes. Cool completely. Filling: 2 cups heavy whipping cream 16 ounces semi-sweet chocolate chips Heat cream until just to boil. Remove from heat and add morsels, stir until completely melted. Pour into cooled crust, refrigerate for 2 hours, or until set. Caramel Sauce: 3/4 cup sugar 3/4 cup brown sugar 1/2 cup light corn syrup 1/3 cup unsalted butter 2/3 cup heavy whipping cream Heat all ingredients, except cream, to full boil. Cool for 5 minutes, then stir in cream. Garnish: 1 1/3 cup heavy whipping cream, whipped until stiff peaks. Serve with whipped cream and caramel sauce.

Can snack on these

I just made a batch of chocolate chip cookies, I added some dark chocolate chips as well. I also like to add some white chocolate chips to my recipe...you use to have the raspberry chips that my husband loved but I can't seem to find them anymore...will you bring them back?

Not melting!

I have a brownie recipe I have made for years. I finish with sprinkling Nestle toll house chips, putting the pan back in the oven (after turning it off), for a few minutes, the chips used to melt and I spread to make a frosting, The last two times I made these, this no longer works. I ripped the brownies up trying to spread the (not) melted chips. Putting them back in oven longer just dries the brownies out. This has been a no fail, easy frosting for decades that doesn't work anymore. What changed?

Yum

To all the people that had flat cookies...baking soda can get old...and batter should be baked cold, and on cold sheets....and cream butter with sugar, ...an old friend baker told me for a chewy/ crunchy combo use one stick butter/ one stick margarine.....hope this helps.

What happened?!?

What happened to the chips? Last night I was making bars for a work potluck and when it came time to melt the chocolate chips, they never properly melted, just turned grainy and clumpy. I thought, "oh ok, maybe I burned this batch" so I had to run out to my local grocery store and picked up 2 more bags just in case it happened a second time. I attempted to melt them again and the same thing happened. :( I ended up spreading the grainy/clumpy mixture on my bars because I didn't want to waste any more money trying to fix it. My grandma had the same problems and she has been making these same bars forever! Unfortunately I will be buying Hershey's or Ghiradelli from now on, I know those melt and give me the smooth shiny texture I am looking for. Very disappointing Toll House.

best ever

I love your Nestle's Chocolate chips . They are the best and they taste the best . I love all the different varieties of Nestle's Chips and I have used all of them . My favorites are the Mint chocolate chips wish they were around all year. I usually stock up on them at holiday time and try to buy enough for the whole year.

So Versatile!

I love using the many different Nestle morsels to make various kinds of fudge! I make my fudge my melting the morsels and stirring in a can of ready made frosting. For example, my favorite is using the white chocolate morsels with cream cheese frosting then adding dried cranberries and pecan pieces. I've used the dark chocolate morsels with salted caramel frosting. Yummy. I have some mint morsels in my fridge right now that I want to mix with a dark chocolate fudge frosting. I take this fudge to work to share since I live alone and wouldn't be able to get out of the door if I ate all the goodies I can make with Nestle's morsels!

Your chocolate chips are not the same!!!

I have been so disappointed in the last 2 bags of chocolate chips I purchased that I began searching the internet to find out if you changed your formula. You keep replying to others' comments that you haven't changed your recipe but it is CLEAR to all of us that something has changed. I sincerely hope you will change it back. The new chips are terrible. Little taste. Not smooth and flavorful. More like eating plastic. I won't buy these anymore.

Thanks for sharing your feedback. As we've stated in other posts, we haven't made any changes to the recipe of our morsels. The most recent change was in 2016, where we removed all artificial colors and flavors. However, that change was so long ago, it wouldn't be what affected the two bags you recently purchased. LOVE THE MILK CHOCOLATE MORSELS

I use them to make simple to difficult recipes...most simple is to use them to make lollipops with candy molds a lot cheaper...I melt them in a bowl in in the microwave and mix in chow mein noodles, coconut, raisins, nuts, and shake decorative holiday sprinkles on tops after dropping by spoonful on parchment paper and refrigerate until firm...I melt them and toss on top of crackers, make peanut butter cracker sandwiches and dip into the melted chocolate, add colorful sprinkles after placing on parchment paper, and refrigerate - so delish...dip graham crackers in them and place on parchment and decorate and refrigerate...so many ways to use these...the best ever chocolate covered strawberries - dip, put on parchment paper, decorate, and refrigerate for all occasions...make a cake and pour lightly all over the top to make a design, place on popped popcorn with walnuts and marshmallow...so many ideas I could go on all day...the best ever quality chocolate to add an extra plus to many desserts.
