Hello Leah! Thank you for sharing your feedback. We appreciate your love for our product. Guar is a plant fiber made from the guar bean. We use it to give the instant broth a heavier mouthfeel. It also helps suspend some of the non-soluble herbs and spices in the broth so that they don't settle to the bottom. We are always researching for better alternatives when they are available.
