Hello Leah! Thank you for sharing your feedback. We appreciate your love for our product. Guar is a plant fiber made from the guar bean. We use it to give the instant broth a heavier mouthfeel. It also helps suspend some of the non-soluble herbs and spices in the broth so that they don't settle to the bottom. We are always researching for better alternatives when they are available. If you know of any foods that could replace what guar does in our broth, we would be very open to studying it! Cheers, The Bare Bones Team
