I am eanting to make lemon sugar cut out cookies using the BC sugar cookie mix. Can i just add lemon flavor to the mix or is there something special i need to do?

I’ve used this sugar cookie mix before and it has always worked out nicely when in a pinch ... but I dont Know if the recipe has changed because now the cookies came out much thinner and then completely hardened over night to the point of inedible.
