Very good flour for baking. I used it to make buttermilk pancakes and they turned out light and fluffy (delicious with some blueberry maple syrup)! This flour has a very soft texture, making it easy to work with.

I have been using this white flour in conjunction with the whole wheat flour for years to make sourdough bread. The bread has always turned out crusty yet light and airy on the inside. Spectacular!

This isn't called "bread flour," but I find it is the very best for making my French bread rise upwards instead of sideways. It gives strength to your dough and a nice texture, too.
