This is a great cut for an amazing price. With minimal butchering skills needed, you will get Baby back ribs, sirloin steaks, tenderloins, pork chops and a roast from each piece. There are some good videos on YouTube that walk you through this - it’s super easy.

If you don't have a saw, get a heavy cleaver. Use a sharp knife to cut in between the bones. Put the knife against the bone, and let it follow down to the spine, and then use the cleaver (either you're strong enough to break through, or get a rubber mallet to help). I know it sounds like a lot for bone in pork chops, but it really isn't that hard, and it's absolutely worth it in the end. BTW I've been working as a chef for over 25 years; I love butchering, it's my thing.

Purchase a case to process ND split between 2 families, we go through the first cryo vac package of meat and everything was fantastic. The meat was well trimmed and was nice and fresh smelling. Then we go out the second cryo vac package of meat and cut it open and that's when things went bad quickly. As soon as we cut it open I was very apparent that the whole package was trash, it smelled so off my wife came out to where we were cutting up the meat because she could smell it. I'm hoping this was just a fluke with the meat being spoiled, I am willing to try another case for the price but I feel it is still unacceptable to be selling bad meat.
