This is a great cut of meat. Full disclosure - the butchering at the source (before it goes in the cryovac) now removes the cap. Coulotte steaks (picanha) have become a big thing in steakhouses, so the supplier removes those and likely sells that piece to them. A bummer, but not actually Sam's fault. Regardless, this is a beautifully lean cut of beef that butchers into steaks with very little waste. The prime grade is even better - and the grade I usually buy - but that's out of stock right now. Choice is still excellent and tasty - the only steaks we eat at home.

Too sirloin is a great piece of meat, alot of people say it is tough, but if uou know what you are doing then it can be a masterpiece. Too sirloin steak has been the number one selling steak in the US for multiple years for a reason. Also anytime you go to a restraunt and see sirloin fillet that is what you are getting. Lovely piecd of meat and im hally that my old meat cutter self can geg a whole when to cut myself and save some cash.

Meat was good, but I was expecting the whole sirloin to include the cap. It does NOT include the cap.

Cap and mouse steak were all ready removed. Not a "whole" sirloin.

Good cut of meat, but I was very disappointed that the culotte cap was removed. To me they should be labeled as such - "peeled"

Would give a 0 if it let me. The butt was mangled, random DEEP cuts around the whole butt making it impossible to cuts steaks from it like normal. Unable to cut baseball steaks do to the deep cuts. A lot of it had to become stew meat. Purchased at the Slidell, LA store. Last time I’ll be there.

There is another review warning that you will receive the sirloin butt without the cap. They are correct, this is only 2 of the 3 muscle groupings of a sirloin butt. The cut I received was very small and under expected weight as well.

This was labeled as a top sirloin roast, however the top part that liturally everyone buys one for has been removed. Don't be fooled.
