My teenager’s favorite! I have a picky 14 year old boy who’s one vegetable that he won’t complain about eating is this. Either straight from the can with butter or in a “make it up as I go” tater tot casserole, they are always crisp and add a delightfully sweet balance to any meal.

I love to make burrito bowls with chicken, rice, corn, black beans, salsa, and avocado. Even just adding corn to a regular lettuce salad adds so much extra flavor.
