People who want pretzels are looking for a certain flavor and also a certain texture. The distinctive "pretzel" flavor of pretzels comes from the interaction of alkali (usually either lye or baking soda) and wheat flour on the surface of the pretzel. Pretzel Crisps attempt to provide that flavor in abundance, since they are all surface. The distinctive texture of a pretzel is either soft and bready (a soft pretzel), or friable and crumbly (a pretzel rod or conventional twisted pretzel). Either way, eating exposes a second, different, baked good flavor in the mouth, and in the case of hard pretzels lets that surface come off in little flakes that effectively deliver the surface flavor. Pretzel Crisps tend to be hard but tough rather than friable, so they do not deliver the texture or the flavor. Instead, they tend to just fracture in in the mouth so that to the extent there is a second taste, it's of starchy flour. I understand why they're made tough, they're so thin they wouldn't survive from the factory to the consumer if they weren't, but because of that they don't work to achieve the desired result.
