Cooking Instructions

Thaw: remove fillets from vacuum wrap and place into plastic bag. Place plastic bag in refrigerator until fillets are thawed.

Grill: preheat grill to medium, grill defrosted salmon on both sides for 6-8 minutes each.

Oven: preheat oven to 375°F. Bake defrosted salmon for 16-20 minutes or until fish flakes with a fork. Bake frozen fillets for an additional 10 minutes or until fish reaches an internal temperature of 145°F.

Meal Idea - Lemon-Dill Baked Salmon with Roasted Asparagus and Quinoa (2 Servings)

Prep Time: 15 minutes / Cook Time: 20-25 minutes

Ingredients

For the Salmon:

  • 2 Member's Mark Skinless and Boneless Atlantic Salmon Fillet Portions (thawed)
  • 1 tblsp olive oil
  • 1 tsp fresh dill, chopped (or 1/2 tsp dried dill)
  • 1/2 lemon, thinly sliced (plus extra for serving, if desired)
  • Salt and freshly ground black pepper to taste

For the Roasted Asparagus:

  • 1 bunch asparagus (about 1 lb), woody ends trimmed
  • 1 tblsp olive oil
  • Salt and freshly ground black pepper to taste

For the Quinoa:

  • 1/2 cup uncooked quinoa
  • 1 cup vegetable or chicken broth (or water)

Directions

Preheat Oven & Prep Quinoa: Preheat your oven to 400°F (200°C). While the oven heats, rinse the quinoa thoroughly under cold water using a fine-mesh sieve. In a small saucepan, combine the rinsed quinoa and broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed and quinoa is fluffy. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork.

Prepare Salmon: Pat the thawed salmon fillets dry with paper towels. This helps achieve a better texture. Place them on a parchment-lined baking sheet. Drizzle each fillet with olive oil, then season generously with salt and pepper. Sprinkle the chopped dill over the salmon, and then place a few thin lemon slices on top of each fillet.

Prepare Asparagus: On a separate part of the same baking sheet (or a second baking sheet), toss the trimmed asparagus with olive oil, salt, and pepper until evenly coated. Spread them in a single layer.

Bake: Place the baking sheet(s) in the preheated oven. Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork (cooking time will vary based on fillet thickness) and the asparagus is tender-crisp.

Serve: Divide the cooked quinoa, roasted asparagus, and baked salmon between two plates. Garnish with additional fresh lemon wedges or dill, if desired. Enjoy!

I love this fish

It is the perfect sized portion. I thaw it, put a little olive oil and butter in the pan, season it with Kinder and cook it just until the very center is a little rare. Ive only come across a bone once in the hundreds of portions I've eaten. I take the thinner ends of the portions and cut them off and keep them for salads then I quickly sautee them and use them with baby spinach, balsamic vinegar, and dried cranberries and ita fantastic.
