Cooking Instructions

1. Thaw & Prep: Fully thaw the roast in the refrigerator. Pat it dry and season generously with salt, pepper, and desired herbs.

2. Sear (Recommended): In a large, oven-safe pot (like a Dutch oven) over medium-high heat, sear all sides of the roast until deep golden brown. Remove roast.

3. Braise (Low & Slow): Add liquid (e.g., beef broth) to the pot, along with optional vegetables (carrots, onions, celery) and aromatics. Return roast to the pot, ensuring liquid comes about halfway up the sides.

4. Bake: Cover the pot tightly and bake in a preheated 300°F - 325°F (150°C - 160°C) oven for 3-4 hours, or until the roast is incredibly fork-tender and easily shreds.

Ingredients

  • 2 (approx. 2-3 lb. each) USDA Choice Angus Beef Boneless Chuck Roasts
  • 2 tbsp olive oil
  • 2 lbs. baby carrots
  • 3 lbs. small potatoes (halved or quartered)
  • 2 large onions, quartered
  • 4-5 cups beef broth
  • 2 tbsp dried onion soup mix (or your preferred seasonings: garlic powder, thyme, salt, pepper)

Directions

  1. Preheat oven to 325°F (160°C).
  2. In a very large oven-safe pot (or two smaller ones), heat olive oil over medium-high heat. Sear both roasts on all sides until browned. Remove roasts.
  3. Add carrots, potatoes, and onions to the pot(s). Place seared roasts on top. Pour in beef broth (to come halfway up the roasts) and sprinkle with seasonings.
  4. Cover pot(s) tightly and bake for 3 to 3.5 hours, or until beef is fork-tender and easily shredded.
  5. Serve hot, with beef and vegetables.

Beautiful cut of meat with the right amount of fat to make it tender. I live alone so I cut them in half and will have the one for Thanksgiving and one for later..The price was just so cheap I checked with the meat department to ensure it was correct. IT WAS!!

Sams has some of the best quality beef

love the quality of all the meats at Sam's and this one as expected, doesn't disappoint. The thickness of the each product is just right for each application. The marbling just seems to be better than even the special grocery stores. I have almost completely stopped getting my meat from anywhere other than Sam's because the others are a let down after trying their meat.
