The slab at my club was priced only $1 per pound less than butchered steaks. Considering that approx. 25% of the slab is waste because none of the fat is trimmed, buying the whole slab with all the excess fat ends up costing more than buying trimmed steaks. I don’t mind doing the work to butcher but I don’t think it should end up costing more per pound.
