Ricos Gourmet Nacho Cheese Sauce 107 oz.

I love nacho cheese. No, I mean I LOVE nacho cheese. Dip some fries in the cheese. Put it on your chips. Make double decker tacos. I love nacho cheese. But my frugal heart often balked at the hefty price tag on a tiny can of cheese, so I'd often go without. One day, I saw this massive can of my favorite brand and wondered... could I FREEZE this cheese? Would it be good when I thawed it out? Well, my friends, I took the $10 hit to experiment, and I'm happy to say that YES, you can freeze this cheese, and YES, it's just as good when thawed and reheated! Here's what I do... I use Great Value Quart Freezer Bags and put about 16oz into each bag. I put all of those bags into a large GV Gallon Freezer Bag and put them all in the freezer. Bam! Now I have 6 pounds of glorious cheese waiting for me whenever the whim strikes. If I know that I want cheese tomorrow, I'll thaw it in the fridge overnight, but generally I will put it in a bowl still frozen solid and warm it slowly, with the defrost function of the microwave, stirring every few minutes. Generally, this will take 10-15 minutes, but that's okay, because nobody wants scorched nacho cheese! It looks gross at first, but trust the process, it will come together again! Once thoroughly thawed and slightly warmed up, I may add a touch of milk to thin it out, and then cook on 70% power until it's hot and bubbly and ready for whatever needs a blanket of cheesy love.

When you need to stretch this cheese sauce for a crowd, add milk a little at a time and stir, stir, stir until you get a smooth consistency. For canned cheese, it's good, but a little thick for our taste. When we had milk, it comes out perfect.
