Best Way to Store Asparagus

Asparagus Risotto Recipe

Ingredients:

  • 1.5 cups Aborio rice
  • 1 cup dry white wine
  • 1 onion - finely chopped
  • 1 lb. asparagus (~half the bag)
  • 3/4 cup grated parmesan
  • 2 Tbsp extra virgin olive oil
  • 4 garlic cloves - finely chopped
  • 5 cups chicken (or vegetable) broth
  • Salt & Pepper to taste

Instructions:

  1. Warm broth in a saucepan over low heat. In a large sauté pan, heat the oil over medium-high heat. Sauté onion and garlic.
  2. Add Aborio rice and cook, stirring constantly, for 2-3 minutes. Add wine and cook until all liquid is absorbed. Add broth, 1/2 cup at a time, stirring occasionally and waiting until it is absorbed before adding more.
  3. Meanwhile in a sauté pan, heat 2 tablespoons of olive oil. Saute asparagus until bright green and slightly tender (about 3-4 minutes). Once broth is completely absorbed into the risotto, add asparagus, season with salt and pepper, and stir in the parmesan cheese.
  4. Serve immediately.

Be sure and pick out asparagus with firm heads - we like the thinnest stalks for quick cook, but thicker are delicious also - season with EVOO, seasoned salt, and granulated garlic(no salt) and broil or bake in oven til desired tenderness!!!

Grilled Asparagus

Broke off the hard ends, put it in a quart plastic bag added enough olive oil to lightly cover the stalks along with fresh ground pepper, salt and garlic powder. Preheated the gas grill to 400f and grilled them for about 5 minutes. We have been cooking asparagus like this for years and depending on being able to find great raw asparagus to grill it always gets great reviews from friends and family. This asparagus from Sams was awesome.
