Great Pine Nuts

I began eating pine nuts in the mid '90s by gathering them myself from Pinyon pine trees in Northern AZ and CO. They can be roasted, but I prefer them raw. I find the Member's Mark Organic Pine Nuts to be just as good as those I used to gather myself, and certainly easier than picking them out of cones!

How to get full flavor out of pine nuts.

You need to toast them for full flavor. They're small, so they only need a short time on a baking tray, the oven. I use 350 degrees, for about 10 minutes. Check them as you go, ovens vary, and do not reach temperature immediately. You want a LIGHT brown color. Leave them in too long, and they get bitter. They are bland without toasting.

We use these on salads at least weekly, so I toast the whole bag in the oven and put them right back in the resealable bag. They last us a long time and are half the price or less than at supermarkets. I have also frozen them raw when I wasn’t ready for a new bag and they lasted a long time.

When I received my nuts they were 2 months from the expiration date, meaning these were not fresh. I should have returned them but needed them for a recipe I was making. I froze the balance and hope they will last 6 months. If these were in store I would not have purchased them. I check dates on everything. With nuts it's important as they get rancid and taste bad.
