This has become a summer tradition at home. Lettuce or spinach, a fruit, feta, nuts and chicken/no chicken and a homemade dressing - delicious and fresh!

It was truly delightful. The flavor was full bodied but not over the top. Definitely worth a try on a chicken breast or chicken thighs.

The spice and bite of Dijon is a nice accent to that leftover sandwich. I find this best used as a base for marinades, dressings, swirled into a cheesy pasta dish, or of course slathered on a burger.
