I was going to fix this as a side with chicken and tortillas, but my sister suggested making quesadillas instead. They were a hit! I spread the hot cheesy corn on a tortilla, topped with grilled chicken and another tortilla and toasted it in the grill skillet on top of the stove. Some of the corn escaped during the flipping, but it just got all caramelized and toasty.

I tried this the first time I saw it in the "limited time" section of the freezer aisles. I am so glad I did because it is the BEST corn I've tried yet. I really hope our club always carries it. I buy two boxes every time I go. Pro tip: Add some cooked macaroni noodles to the corn after you put it in the microwave, put it all in a skillet with a tablespoon of butter and smoke it for a while on your smoker.
