Fairly Good Okra - So Far

I purchased this because the quality of most frozen cut okra has become deplorable. In most cases it has been picked too late and has a hard outer skin with large seeds. When fried, old late-picked okra is so hard chewy and fibrous you end up having to spit most of it out. This breaded okra has not been that way so far - other than being a little chewy but still tolerable. Okra has to be picked while it is still young and juicy on the stalk - wait a day too late and it is terrible. Many growers appear to be picking too late - in order to increase profits with larger okra pods. So long as this product is good, I'll continue purchasing it. It's really easy to know when to correctly pick Okra. All you have to do is snap the pods with your hands. If they are stringy, and don't break cleanly, the Okra is too old. Every good farmer knows this. Okra grows quickly and has to be picked daily from every stalk or it will get too old. I cook mine in olive oil using an iron skillet over medium high heat. It takes just a bit longer than the package says to become golden brown, but there are no blackened pieces if you pay attention.
