GREAT PRODUCT 
Easy to used, pour out of bag into a bowl, add a little water to make the consistency thinner or to your liking. Mix well now it's ready to eat. 
If you want the poi to become fermented leave out on your kitchen counter, if you want to slow down this process add a little water on top of poi the put in the refrigerator. 
This will keep it from fermenting faster.  Also you may FREEZE YOUR POI.
When you are ready to eat,  place Poi in Microwave safe bowl place in microwave for 4 minutes should be soft by then,  stir & let it cool on counter top. 
Once cool to your liking, it's ready to eat.
