Caesar Salad w/ Pollo Asado (Serves 4)

Ingredients

• 1.5 lbs. pollo asado
• 2 heads of romaine, roughly chopped
• 3 cups of croutons
• 1/4 cup of parmesan, freshly grated
• Caesar Dressing: Homemade or store bought
• 1/2 cup of mayonnaise
• 3 tbsp. of freshly grated parmesan
• 1 clove of garlic, grated
• 1 tbsp. of fresh lemon juice
• 1 tbsp. of dijon mustard
• 1/2 tbsp. of Worcestershire sauce
• Salt and pepper to taste

Instructions

For Oven: Preheat oven to 400°F. Place chicken on a lightly oiled baking sheet. Cook for 18-20 minutes until it reaches an internal temperature of 165°F. Let rest for 5 minutes then dice.

For Grill: Preheat grill to medium-high heat. Lightly oil the grill. Cook for 7-10 minutes on each side or until it reaches an internal temperature of 165°F. Let rest for 5 minutes then dice.

In a medium bowl, whisk together mayonnaise, parmesan, garlic, lemon juice, Dijon mustard, and Worcestershire. Season with Salt and pepper to taste.

To assemble the salad, place romaine in a large bowl, top with chicken and croutons. Pour the dressing on top of the salad and gently toss to combine. Top with Parmesan and divide onto 4 plates.
