Recipe: Mini Pumpkin Pies

Servings: 12

Preparation: Unroll 2 refrigerated pie crusts (from 14.1-oz package) on a lightly floured surface. Using a 3 1/2-inch round cutter, cut out 6 rounds from each crust. Re-roll scraps as necessary. Press dough rounds into a muffin pan sprayed with no stick cooking spray. Set aside.

Filling: Mix 1 can (15 oz) pumpkin, 1 can (14 oz) sweetened condensed milk, 2 eggs, 1 tbsp. McCormick® Pumpkin Pie Spice, and 1 tsp. McCormick® Pure Vanilla Extract in a large bowl until smooth. Pour into prepared crusts, filling each almost to the top.

Baking: Bake in a preheated 375°F oven for 25 to 30 minutes or until the filling is set. Cool completely in pan on a wire rack.

Whipped Cream Topping: Meanwhile, beat 1 cup heavy cream, 1/4 cup confectioners’ sugar, and 1 tsp. Pour Vanilla Extract in a medium bowl with an electric mixer on high speed until stiff peaks form.

Serving: Serve mini pies topped with whipped cream and sprinkle with additional Pumpkin Pie Spice, if desired.
