Sweet Corn, 8 ct.

This super sweet corn can be easily microwaved or boiled for your enjoyment. No mess; the corn is already husked and trimmed for a convenient side item or a super sweet snack!

Recipe: Elote Salad

Ingredients:

• 8 Ears sweet corn
• 1/2 cup mayonnaise
• 1/2 red onion (diced)
• 1/2 cup Cotija cheese
• 2 tbsp hot sauce of choice
• 1/2 cup cilantro (chopped)
• 1/2 Red bell pepper (diced)
• 1/2 Orange bell pepper (diced)
• 3 tbsp lime juice; salt & pepper to taste

Instructions:

Remove corn from tray, rinse, and place in boiling water. Once cooked, remove the water and let cool to the touch.

Remove corn from the cobs and place corn kernels into medium sized mixing bowl. Add diced bell peppers, onion, and cilantro along with lime juice, salt and pepper. Mix ingredients together. In a separate bowl, mix mayonnaise and hot sauce together. Serve topped with Cotija cheese and hot sauce/mayo mixture.

Makes 8 servings.
