The oxygen will soften the intense, bold flavors of the wine, making it more enjoyable to drink. Being a red wine, the serving temperature is between 16°C and 20°C (60–68°F), or room temperature. Small lots are picked and fermented individually with minimal intervention to allow the true expression of the soil and climate. The wines are matured in a unique selection of hand-crafted French and American oak barrels. San Simeon Cabernet Sauvignon was aged for 18 months in a selection of 78% new French and American Oak barrels. We source our barrels from several coopers and forests to add complexity to the finished wine. Sustainability is a top priority at San Simeon. Our Paso Robles Vineyards are certified sustainable by the rigorous California Sustainable Wine Alliance (CSWA). At our Paso Robles winery, solar panels provide 100% of the needed electricity, and wastewater is effectively reclaimed and recycled for additional uses.</p> <h3>About Simeon Wines</h3> <p>All Simeon Wines are terroir-driven wines shaped by unique soils and the Pacific Ocean’s influence, which cools the vineyards at night to give our wines their distinct freshness. Paso Robles does it again!

Love this!

An excellent cab and well priced a bit below regular retail and the price at the winery. It's a fine, very drinkable wine and should age well also. I have a number of bottles, have already used one and it was very good, I would recommend, at this price (about $20) I'd consider it a good buy.
