Serving Recommendations

Cabernet Sauvignon benefits significantly from decanting and should be allowed to breathe between 30 and 60 minutes. The oxygen will soften the intense, bold flavors of the wine, making it more enjoyable to drink. Being a red wine, the serving temperature is between 16°C and 20°C (60–68°F), or room temperature. Do not chill the wine beforehand; do not put it in an ice bucket. Always serve Cabernet Sauvignon in red wine glasses—do not chill the glasses beforehand. Hold the glass by the stem to avoid warming the wine and dulling the tastes and aromas.

Process

San Simeon Cabernet comes only from the best lots that our estate vineyards have to offer. Small lots are picked and fermented individually with minimal intervention to allow the true expression of the soil and climate. The wines are matured in a unique selection of hand-crafted French and American oak barrels. San Simeon Cabernet Sauvignon was aged for 18 months in a selection of 78% new French and American Oak barrels. We source our barrels from several coopers and forests to add complexity to the finished wine. Sustainability is a top priority at San Simeon. Our Paso Robles Vineyards are certified sustainable by the rigorous California Sustainable Wine Alliance (CSWA). At our Paso Robles winery, solar panels provide 100% of the needed electricity, and wastewater is effectively reclaimed and recycled for additional uses.
