Crispy Baked Chicken Tenderloins

1. Preheat oven to 400 degrees.
2. Place 2 cups rice cereal, or favorite gluten free or panko alternative, with ½ tsp salt, ½ tsp garlic powder, and ¼ tsp pepper in food storage bag. Seal, crush and mix together (with hands or rolling pin).
3. Meanwhile, whisk together one egg and one egg white and set aside.
4. Use 2 pouches of chicken tenderloins. Dip each piece in the egg mixture first, and then place into the rice mixture to coat.
5. Place each on a baking sheet, prepared with parchment paper.
6. Spray each piece lightly, both sides, with cooking spray.
7. Bake for 25 minutes, or until chicken reaches an internal temperature of 165 degrees Fahrenheit.
8. Serve with your favorite dipping sauce, like barbecue, honey mustard, ranch, or ketchup! Viola! Enjoy.
