Production Method

Grapes were individually harvested from our vineyard blocks in subregions throughout Marlborough and destemmed in the field before being gently pressed and fermented. To retain the character of each subregion and block and use them to the best advantage, each block was handled individually to capture the special characteristics of the vineyard parcel. Carefully chosen, sun-ripened New Zealand grapes undergo cold-soaking prior to fermentation and treatment with Spinning Cone technology, which removes a portion of the alcohol without impacting the aroma or taste of this New Zealand white wine. The alcohol is reduced to below 1% on approximately 60% of the final volume, with 40% of the base blended back to achieve a final alcohol level of 7%. For optimal enjoyment of this bottle of wine, serve chilled.

The unique and varied geography of New Zealand helps to insulate our vineyard and protect the grapes from the elements. With grapes grown between the latitudes of 34° and 47°, our growing regions cover a distance of 1,000 miles from the northern tip of the country to the southern coast. Such a large growing area gives Kim Crawford the distinct advantage of a wide range of local climates and soil types to promote distinctive regional flavors and characteristics.

The vineyards of Kim Crawford are located in outstanding, predominantly coastal sites. The grapes benefit from long days, clean sea breezes and crisp nights. In combination with New Zealand’s long and dry autumn season, our grapes ripen slowly, which allows them to build flavor intensity as well as develop a sophisticated acidity. In the end, it is this unique combination of factors-from regions and soils, to temperatures and growth rates-that give Kim Crawford a perfect balance of fruit and acidity.

Ingredients

• 2 cups frozen mango
• 2 cups (16 ounces) Kim Crawford Illuminate Sauvignon Blanc
• ¼ cup (2 ounces) pineapple juice
• Juice of 2 limes (about 2 ounces or ¼ cup)
• 1 lime, cut into wedges

Garnish

• Rosemary sprigs
• Thinly sliced blood oranges

Instructions

1. Blend all ingredients until smooth

2. Taste and add sugar if you want a sweeter drink

3. Pour into four glasses and serve with a lime wedge
