Flavor Bombs® Lemon Pasta

Ingredients:

  • 8 oz. dried pappardelle pasta
  • ¾ cup heavy cream
  • 1 lemon (zest and 2 Tbsp. juice)
  • 1 cup Parmesan cheese
  • 4 Tbsp. butter
  • 1 egg yolk
  • 1 cup Flavor Bomb tomatoes, halved
  • 2 Tbsp. fresh chives, finely chopped

Directions:

  1. Cook pappardelle pasta according to package directions.
  2. In a large frying pan, add cream and cook on medium- high for 2-3 minutes.
  3. Add lemon zest, Parmesan cheese and 2 Tbsp. of butter, cook for 1- 2 minutes on medium-low heat, until cream thickens.
  4. Add cooked pappardelle to the cream mixture, toss.
  5. Turn off the heat, add egg yolk and lemon juice. Gently toss.
  6. Add Flavor Bomb tomatoes to the pasta and toss again.
  7. Garnish with chives.

THE Best tomatoes available

These are the absolute best tomatoes you can buy year round. I grow tomatoes and buy at the farmers’ market, mine or not ready. Very picky tomato eater. In the winter and off months these are the only tomatoes that I will eat because they still taste like tomatoes. They are delicious. They have the right texture, not mealy and are still sweet and taste like tomatoes.
