<h3>Flavor Profile</h3> <ul> <li> <ins>Aroma:</ins> Notes of fruits and earth</li> <li> <ins>Taste:</ins> Dry with ripe fruits like blackberries and some spice</li> <li> <ins>Body:</ins> Medium-bodied that has good balance with solid structure but not over complicated</li> <li> <ins>Finish:</ins> Longe finish clean and aromatic</li> </ul> <h3>Productions Methods</h3> Château de la Vieille Tour Les Carmes is made with 3 out of the 11 grape varieties we grow in our Estate Vineyard in Bordeaux, France. Parcels of Merlot, Cabernet Sauvignon and Cabernet Franc are selected and harvested at full maturity. Each grape variety is vinified separately to express its best potential. They are then blended after being aged in stainless steel tanks and concrete tanks for 24 months. The secret of this Cuvée is the addition of a small percentage of Merlot and Cabernet Sauvignon aged 12 months in French oak barrels in our underground cellar; a hint of extra complexity. <h3>About the Company</h3> In 1839, Pierre Boissonneau created the family Estate Vineyard and Winery in the southernmost part of the Bordeaux region. For over 185 years, the Boissonneau family owns the Château and manages the 25ha (62 ac.) vineyard in Bordeaux &amp; Southwest of France. Since 2007 the Estate has been certified organic and biodynamic by Demeter since 2021. Today the 6th generation runs the winery, and they inherited the family’s love of wine and cultivates the vines in a traditional and eco-responsible manner. The wide variety of grape varieties, typical of the region, is at the origin of the complexity of Bordeaux wines. Through their environmental commitments, they are preserving and protecting their environment and land for their generation and the ones to come. <h3>Rib-Eye Bordelaise Sauce Recipe</h3> Serves 4 <ins>Ingredients</ins> <ul> <li>Rib-eye steak (1 to 1 1/2 lbs.)</li> <li>5 fl. oz. Chateau de la Vieille Tour Bourdeaux</li> <li>4 Shallots</li> <li>1 tsp Butter</li> <li>1 tsp Thyme</li> <li>1 Bay Leaf</li> <li>Salt</li> <li>Pepper</li> </ul> <ins>Instructions</ins> 1. Sauté finely chopped shallots in the butter 2. Pour in the red wine, add bay leaf and thyme. Season with salt and pepper 3. Let it reduce by at least half 4. Keep warm, and just before serving the meat, add the juices and a little extra cold better to help bind the sauce 5. Heat grill to high 6. Add butter and grill for about 4-5 minutes per side depending on thickness of steak, turning once. (The internal temperature in the thickest section of steak is 125°F for medium rare.) 7. Remove the steak from the grill, cover and let it rest for 5 minutes 8. Slice steak and serve with sauce on top of it

I bought one bottle to taste then went back for 6 more cases of 12. Absolutely delicious every day Bordeaux and no headache even after a whole bottle to myself … organic grapes and nice flavor at that price is hard to beat !
