Grapes are hand harvested at first light, maximizing freshness and vibrancy. The fruit undergoes whole-cluster pressing and sits for 36 hours. Part is then fermented into concrete eggs, another part in neutral oak barrels, and the rest in stainless steel tanks. This allows Ritual to create different components which reveal varying aromatics, flavors and textures. The wine is aged in each of its containers for eight to 10 months, working on the lees, in order to obtain a smooth and complex mouthfeel, without losing its freshness.
