Organically grown in the warm sandy soils of California's sunny Central Valley, these premium nutrient-dense sweet potatoes are considered a superfood. They're a great source of vitamin A, vitamin C, manganese, potassium and fiber. They can be prepared in a number of ways: boiled, baked, steamed, grilled, roasted or fried. Cutting these premium potatoes into 1/2-inch slices and quick steaming for 7 minutes not only brings out their great flavor but helps to maximize their nutritional value.
Baked sweet potatoes are delicious even when served cold and make a great food to pack in to-go lunches. Commonly referred to as "yams", they are in fact a moist orange fleshed variety of sweet potato. Studies have shown sweet potatoes can potentially provide improvement of blood sugar regulation even in persons with type 2 diabetes.
When stored in a cool dry place, sweet potatoes can last for weeks. Never store uncooked sweet potates in the refrigerator as it can shorten their shelf life and affect their texture and flavor. Cooked sweet potatoes can be stored in airtight containers in the refrigerator for up to a week or in the freezer for up to a year.
