How to Make It
In a bowl, whisk eggs then mix in cheddar cheese, spinach, bacon, green onions, quinoa, salt, and pepper. Whisk all ingredients together. Preheat oven to 350°F. Spray muffin tin with non-stick cooking spray. Fill muffin tins with egg-spinach-bacon-quinoa mixture. Bake for 15-20 minutes or until golden brown.
