The New England Coulommier is locally hand-crafted using pasteurized cow's milk and cream. Carefully cured for just three weeks, it develops a thin, bloomy rind and lush, buttery interior. Krystal Pure Cave Aged Cheddar has been nicknamed the "block of gold" and is one of our most popular offerings. It develops tyrosine crystals, creating the same crunch as Parmigiano-Reggiano with a medium sharp cheddar flavor. Wisconsin Mountain Bleu has a mild spice, aged for just three months to maintain a fresh, pasteurized cow's milk paste with subtle blue deposits throughout. Rouge Affinee is a pasteurized whole cow's milk cheese rubbed with annatto seeds and hand-ladled, developing a natural rind and soft and creamy interior with buttery flavor and spicy overtones. Two sopressatas, one sweet and one spicy, are made with premium ground pork with no additives or fillers, and dry-aged for a minimum of 30 days to develop rich flavor, texture, and color.
