Beef chuck is best prepared using moist heat. Most chuck cuts are less tender and require long, slow simmering time to tenderize. The exception is the Chuck Eye Roll (#116D) portion of the chuck roll (#116A) which is a tender cut and can be dry-roasted to produce a flavorful, tender entrée.
