Do the handles get hot in the oven?
The stainless steel handles and lids are oven-safe like the pans themselves up to 500°F, but they will get hot. We recommend using pot holders when taking these pans from the oven or handling them on a hot stovetop.
What does 18/10 stainless steel mean?
When talking about stainless steel, 18/8, 18/10 and 18/0 are the three grades given to steel used for food preparation. The first number (18) represents the amount of chromium present and the second number (8, 10 or 0) represents the amount of nickel. So, for this set of Tramontina Tri-Ply Cookware, 18/10 stainless steel stands for 18% chromium and 10% nickel. The tri-ply construction includes an aluminum core to give these heavy-duty pans even heating that distributes across the pans cooking surface without coming into contact with the food.
How do I keep food from sticking to the surface?

Defrost your food before cooking as cold food tends to stick more than room temperature food.
Preheat the pan on medium heat for a couple minutes before cooking.
Cook with a little oil or butter.
Let your food cook before turning.
Turn the heat down after placing your food in the pan. The aluminum core of the pans retain the heat, so the pans never need to be turned up to high and once food is placed you can reduce the heat to medium or medium low to avoid burning your food.
