What are Burnt Ends?

Traditional burnt ends are from the brisket “point," which are the moist cuts of the beef. Burnt ends are smoked longer due to higher fat content, and when finished, they are smoky, tender and downright delicious.

Legend of the Burnt Ends

Burnt ends are considered a Kansas City barbeque delicacy. In the past, when customers waited in line for their barbecue orders at Kansas City area restaurants, they watched as countermen cutting beef brisket for orders would trim the burned outer edges from the brisket “point” and push them to the side. Customers were allowed to sample these brisket pieces as they waited and so began a legendary craving for more of these burnt ends. Now, you can get the flavor without having to wait in line at the meat counter.
