Romaine lettuce is a favorite with just about every salad lover. Its mild, sweet flavor makes it one of the most easy to use salad greens. And, it's rich with protein, calcium, Omega-3s, Vitamin A and iron.

Recipe: Chopped Romaine Salad with Apple, Pecans and Chicken

What You'll Need

  • 7 Cups Chopped Romaine
  • ¼ cup dried cranberries
  • 1 cup cooked chicken breast, cubed
  • ¼ cup roasted pecans
  • ¼ cup crumbled blue cheese
  • 1 apple, cut into thin slices
  • 1 Tsp Dijon mustard
  • ¼ Cup extra virgin olive oil
  • 2 Tbsp. Honey
  • 2 Tbsp. white wine vinegar
  • Salt and pepper to taste

How to Make It

  • Dressing: combine Dijon mustard, olive oil, honey, white wine vinegar, salt and pepper
  • In serving bowl add chopped Romaine, top with cranberries, chicken, pecans, blue cheese, apple slices
  • Drizzle with dressing
