Copper Kettle Cheese: Copper Kettle is a hard, domestic cheese made through the natural fermentation of cow’s milk. The use of Old World Copper Kettles in the cheese-making process results in a mild, nutty flavor, reminiscent of Grana Padano. The cheese is cured for 14 months to develop the flavor, color and texture that are characteristic of aged parmesan.
Altu Cheese: Altu Cheese is a semi-hard, rBGH-free Gruyere-style cheese made through the natural fermentation of pasteurized cow’s milk. The cheese is cured for 180 days to develop flavor, color and texture that are characteristic of alpine cheese. The cheese is made with milk that is certified as coming from cows that have not been treated with rBGH.
Tuscan Rubbed Fontal Cheese: Tuscan Rubbed Fontal is a semi-soft, rBGH-free cheese made through the natural fermentation of cow’s milk. The cheese is aged for approximately 60 days to develop the characteristic flavor. The cheese is hand-rubbed with a classic blend of Italian herbs and spices.
