<h3>Flavor Profile</h3> <p>Its appearance is bright, transparent dark mahogany with copper glints. On the nose it is clean, elegant and well-rounded with hints of the Sherry which seasoned the barrels. On the palate it is beautifully balanced, warming and smooth while it has a very long finish where all the subtle nuances come together leaving a lasting impression of personality with hints of raisin and prune.</p> <h3>Production</h3> <p>Cardenal Mendoza Solera Gran Reserva is our classic Sherry Brandy, matured for an average of 15 years in Oloroso and Pedro Ximénez sherry casks. Cardenal Mendoza Clásico is a Solera Gran Reserva Brandy created from a selection of the best holandas (the finest spirit, distilled slowly in alquitaras or pot stills) which are aged in the traditional system known as soleras and criaderas. As an authentic Sherry Brandy or Brandy de Jerez, Cardenal Mendoza is made from a selection of spirits between 36 and 45 degrees.</p> <h3>History</h3> <p>Whenever we speak about our proud history, we always begin with our roots and birthplace, Jerez de la Frontera. For centuries the city has been world famous for its Sherry wines, and at the end of the 18th century had become a hive of business activity thanks to huge international demand for them.</p> <p>The name pays homage to the first Cardenal Mendoza, Don Pedro González de Mendoza (1423-1495), a prominent historical figure in15th century Spain. As counsellor to King Fernando II and Queen Isabel I, he had the complete confidence of the Queen and played decisive roles in supporting Columbus’ first voyage to the Americas and in the unification of Spain. Don Pedro was a great patron of renaissance culture which he introduced to Spain.</p> <h3>Chocolate Pairing</h3> <p>Pairing with such a sophisticated drink requires a high-quality chocolate to complement such a rigorous elaboration process. The bitterness provided by chocolate with a high percentage of cacao (minimum 60%) marries beautifully with the subtle sweet notes of plums and raisins that are transferred to our brandy from the barrels previously treated with Oloroso &amp; Pedro Ximénez wines.</p> <h3>Food Recipes</h3> <p>Enhance the flavor of the ingredients, you are cooking with! The woody sweet notes transferred through the American oak barrels previously seasoned with Oloroso and Pedro Ximénez wines make Brandy a perfect food pairing, especially for desserts. Add a dash of Cardenal Mendoza to tiramisu, chocolate mousse or chestnut purée and use it for flambés. It is brilliant for soaking dried fruit, such as apricots and raisins, which can be used as an addition to other dessert dishes.</p> <p>Cardenal Mendoza can really bring out the flavors of good quality meat. Add a splash of Cardenal Mendoza to a pan fried steak. You may also use Cardenal Mendoza as a marinade for pork and leaving the meat to rest in the brandy for a while to soak up its flavors.</p> <h3>Try it Mixed</h3> <p>Cardenal Mendoza with coca cola and ice has been a classic long drink served especially in Spain and Mexico for many years. We recommend serving in a tall glass with a slice of lime to garnish. During the hot summer months, ginger ale and lemonade are excellent mixers with Cardenal Mendoza, again served in a tall glass with ice.</p> <h3>Espresso Brandini Recipe</h3> <p><strong>   <ins>Ingredients</ins></strong></p> <ul>  <li>60 ml Brandy Cardenal Mendoza</li>  <li>30 ml Fresh espresso</li>  <li>20 ml Coffee Liqueur</li>  <li>10 ml Simple Syrup (optional)</li> </ul> <p><strong>   <ins>Instructions</ins></strong></p> <p>1. Shake all with ice</p> <p>2. Strain in a glass with fresh ice</p> <p>3. Garnish with cocoa nibs</p>
