How Is Auricchio Domestic Provolone Cheese Made?
This fantastic provolone cheese is made in six steps that have been perfected over centuries. First, milk is poured into stainless steel tanks and brought to 37°C while exclusive Auricchio rennet is poured inside. Next, dairy-men break the curd and cook the milk to 45°C while the paste is taken and laid to rest on stainless steel tables. The paste is then spun and minced at 70°C before being worked by hand, the shapes are molded one by one and checked for flaws. The cheese is passed through ice water and stored in brine tanks for up to 20 days. Next, the cheese is brined and aged, making sure temperature, humidity and air circulation are all perfect. Last, the cheese is cleaned and wrapped in Auricchio packaging for perfect preservation.
