<h3>Flavor Profile</h3> <ul>  <li><strong>    <ins>Aroma:</ins></strong> Crisp, bright agave with lively citrus notes and a fresh herbaceousness including white pepper and minerality</li>  <li><strong>    <ins>Taste:</ins></strong> Full and complex cooked agave notes, developing front to back with notes of fresh cut grass and a touch of fresh cut grass and a touch of earthiness</li>  <li><strong>    <ins>Body and Color:</ins></strong> Unaged, crystal clear color, delightfully explosive to sip</li>  <li><strong>    <ins>Finish:</ins></strong> Thick, viscous mouthfeel with a long harmonious finish</li> </ul> <h3>Ingredients</h3> <p>Only 3 ingredients go into every single bottle of Tequila Ocho: overripe agaves grown and harvested from single-estate ranchos in Los Altos de Jalisco, mineral water from our own spring, and natural airborne yeast.</p> <h3>Process</h3> <p>Made by hand and heart, tequila ocho is one of the few tequilas still made in the slow, artisanal way with the utmost care and passion. We only harvest overripe agaves from the golden triangle of Los Altos De Jalisco that are then slowly roasted in old stone brick ovens, fermented with natural airborne yeast, and distilled at low temperatures. Cooking is low and slow, taking place over 72 hours, to ensure that we do not burn the sugars and ensure an even cooking throughout the oven.</p> <p>Fermentation technically begins as the agaves cool after roasting. Once crushed, the pressed agave juice is added to the wood vats, left to ferment for 100 hours through natural airborne yeast, which is present in the region. Tequila Ocho is double pot-distilled, with the second distillation taking place in a very small, fully-copper pot still, modeled after Carlos’s grandfather’s original copper pot stills. The high contact with copper allows the still to naturally remove unwanted compounds from the liquid.</p> <p>Tequila Ocho’s aged expressions rest in 200 liter American oak barrels, that were previously used for aging American Whiskey. At Ocho, nothing is rushed, which ensures maximum agave essence comes through in the final distillation. The result is an additive-free tequila that expresses unmasked, agave flavor.</p> <h3>Company History</h3> <p>Our story begins in 2008, when two men with a love for agave spirits came together with the single goal of proving the concept of terroir exists in tequila, inspired by the heritage and process surrounding fine wine. The famed Carlos Camarena, a fifth-generation farmer and third generation tequilero teamed up with Tomas Estes, the man responsible for bringing tequila culture to Europe. Tequila Ocho Plata</li>  <li>2 fl. oz. Grapefruit Juice</li>  <li>0.5 fl. oz. Lime Juice</li>  <li>0.5 fl. oz. Simple Syrup</li>  <li>2 fl. oz.
