By World War II, cheese production in Wales had nearly ceased; run out of business by large cheesemaking factories in England. Fortunately for us, there has been a revival of old ways by a new generation of cheesemakers. They have saved Caerphilly (the only traditional Welsh cheese made today) from the factory-made processed form it had become in England and returned it to its original farmhouse character. Now, they are creating other fine cheeses such as Red Dragon, also known as Y-Fenni. This smooth, firm, tasty cheddar is made with Welsh brown ale and mustard seeds. Red Dragon is a buttery and spicy cheese with plenty of bite but is not too hot. Not only do the mustard seeds give Somerdale Red Dragon Cheddar Cheese with Wholegrain Mustard and Ale, 1 lb. its marvelous flavor, but also its texture. The brown ale makes the cheese moist and tangy. Red Dragon is aged for three months, made from cow's milk, and is vegetarian. Serve as a table cheese or melted on toast with dark ale or try a Shiraz, if you prefer wine. Serving suggestion: Allow your cheese to reach room temperature (remove from refrigeration about one hour before serving) as cheese is best experienced at room temperature to enjoy the full spectrum of flavors.! Perishable. Store at 41°F before removing for serving.

I was THRILLED to find Red Dragon cheese at my local Sam's Club in Asheville, NC.  This cheese is amazing and I'm always grabbing it when I see it in the "fancy" cheese section at my local Publix.  It's price was better at Sam's, of course.

I am a cheese lover & particularly am fond of cheeses with different flavors.  This cheese is great.  The mustard taste is not overwhelming.  This is a softer cheese that is great for eating.

This is one of my favorites. The texture is creamy and taste is on the mild side with mustard seeds. This is a must try if you like mustard.

You’ll need to enjoy mustard on this cheese. It definitely was one that needed to be eaten with a cracker very strong mustard flavor for those who love mustard. You’re all in for those of us who like it. It’s a little much.

This is not cheddar, I am a big fan of extravagant cheeses, but I couldn't eat this one, it tasted like feta with vomit.

The presentation of the cheese is great. The quality is great. It smells great. Nice texture. Sadly, I mostly taste ale. Now... I do not drink ale. I don't drink beer either. Can't stand it by itself, but I do enjoy cooking with it from time to time because it can help lift dishes. My boyfriend likes beer, loves good stouts and ales. He also disliked the cheese. Even the taste of the cheese away from the mustard and ale doesn't come through. If I wanted ale, I'd drink it, not eat it.
