Full-bodied, unctuous, with high adherence in the glass (slow descent of tears or legs). <h3>Aromas</h3> <ul> <li>Dominant aroma of cooked agave and cooked agave fiber</li> <li>Aromas of cooked and raw agave</li> <li>Herbaceous aromas, field herbs, green grass, spearmint and mint</li> <li>Floral aromas, orange blossom - lemon and light rose perfume aroma</li> <li>Aromas of citrus fruits such as grapefruit and lemon and fruity notes such as pineapple and pear in the ripening stage</li> <li>Spicy aromas such as clove and cinnamon can also be found</li> </ul> <h3>Mouthfeeling</h3> Warm, pleasant, silky, and creamy (dense on the tongue and palate). In the aftertaste after tasting the tequila, it is persistent, without losing the great diversity of flavors, even after a long time of tasting the tequila. <h3>Key Process Variables</h3> <ul> <li>Cooking agave in small masonry ovens</li> <li>Grinding of cooked pineapples in a bakery and in a mechanical mill</li> <li>Two stages of distillation in copper stills</li> </ul> <h3>Process</h3> <ul> <li>Sowing: The process begins with the planting of the Blue Agave Tequilana Weber in the red soils of the Atotonilco el Alto region, Jalisco.</li> <li>Jima: After approximately 7 years, the agave finally reaches the right level of maturity to give us its best flavour. It is then that our jimadores remove the leaves with the help of a sharp tool, called a coa, to discover the heart of the plant: the pineapple. At Siete Leguas we harvest the pineapples, reserving a small part of the green bark of the leaves, a crucial task to achieve the characteristic body of our tequila. It is hard work and extreme care is required to preserve what took nature so long to achieve.</li> <li>Selection: The pineapples are carefully selected, precisely measuring their levels of reducing sugar concentration to ensure maximum concentration and quality of agave juice.</li> <li>Cooking: The pineapples are split in half to ensure even cooking, and the remaining quiote or core is removed. They are then placed in small masonry ovens where they are slowly steamed.</li> <li>Grinding: Grinding occurs in two distinct processes to extract the precious, cooked agave juice. In one process, we use the Tahona, or stone mill, which rotates slowly crushing the agave. In the other process, we extract the juice through a mechanical mill.</li> <li>Fermentation: Fermentation is a key step in the production of our spirit. At Siete Leguas we make it naturally, in exposed tanks and without added yeasts, both with and without cooked agave fiber, processes that provide a wide range of aromas and flavors to our tequila.</li> <li>Distillation: We use small copper stills that give our tequila an exquisite flavor, carefully and precisely removing the upper and lower alcohols, reserving only the best after two distillations. This is where the great spirit of Siete Leguas is released.</li> <li>Cask: Resting or aging is carried out in American white oak barrels previously used to make Bourbon.</li> </ul> <h3>Tulip Recipe</h3> Ingredients <ul> <li>1.5 fl. oz. Siete Leguas Blanco</li> <li>2.0 fl. oz. Cold brew*</li> <li>0.5 fl. oz. Lemon juice</li> <li>0.5 fl. oz. Hibiscus shrub*</li> <li>0.5 fl. oz. Tonic water</li> </ul> *Hibiscus shrub In a jar, combine 500 g sugar, 50 g dried rosemary, 200 g dried hibiscus, 30 ml apple cider vinegar and 500 ml water. Refrigerate for 12 hours, then remove, stir, bring to the boil. Strain and store. *Cold brew In a container, place 300 g of coarsely ground coffee of your choice with 800 ml of water and leave it in the refrigerator for 24 hours, stirring every eight hours. Strain and store. Garnish <ul> <li>Mint leaves</li> <li>Dehydrated lemon slice</li> </ul> Instructions 1. In a shaker, mix Siete Leguas Blanco, cold brew, lemon juice and ice 2.
