Grilled Peach Tomato Salad Recipe

• 10 slices bacon
• 1 tablespoon brown sugar
• 3 tablespoons apple cider vinegar
• Salt and pepper
• 10 peaches
• 5 tablespoons olive oil
• 1 tablespoon honey
• 2 teaspoons Dijon mustard
• 2 cups red leaf lettuce
• 3/4 cup fresh baby Mozzarella cheese balls
• 3/4 cup Cherubs®
• 1/3 cup avocado
• 1/4 red onion
• 2 tablespoons fresh mint

Instructions:

1. Preheat the oven to 390°F.

2. Place the bacon on a baking sheet and roast for 10 minutes, or until crispy. Transfer to a paper towel-lined plate to drain.

3. In a small bowl, whisk together the brown sugar and apple cider vinegar until the sugar dissolves. Season with salt and pepper and set aside.

4. Brush the quartered peaches with olive oil and season with salt and pepper.

5. Grill the peaches for 3 minutes, then transfer them to a baking sheet and drizzle with the brown sugar mixture.

6. Roast the peaches for 10 minutes, then remove from the oven and set aside to cool slightly.

7. Prepare the vinaigrette by whisking together the honey, Dijon mustard, apple cider vinegar, olive oil, salt, and pepper until well combined.

8. In a large salad bowl, combine the red-leaf lettuce, Cherubs® tomatoes, roasted peaches, mozzarella, red onion, bacon, mint, and avocado.

9. Drizzle the vinaigrette over the salad and toss gently to coat.

10. Serve immediately.
